Meet the Chef

Chef Duong Nguyen

Born in Hanoi, Chef Duong grew up surrounded by the intoxicating aromas of his grandmother's kitchen. Her phở, simmered for 24 hours with bones, star anise, and cinnamon, became the foundation of his culinary philosophy.

After training in some of Vietnam's most prestigious kitchens and traveling through Southeast Asia to perfect regional techniques, Chef Duong brought his vision to Madrid in 2013, opening a restaurant that would bridge two cultures through the universal language of flavor.

2013

The Beginning

Chef Duong opens the doors of Vietnam Restaurante in the historic Las Huertas district, bringing authentic phở to Madrid for the first time.

First Recognition

Featured in El País as one of Madrid's best Asian restaurants. The secret was out: authentic Vietnamese cuisine had found a home in Spain.

The restaurant undergoes a complete renovation, introducing the elegant design you see today while expanding our menu with regional specialties.
